Unsure if the cream is stiff enough and over beaten your whip cream and ended up with this curdled mess? Fret not, you don't have to throw them out! Turn over-whipped cream into homemade buttermilk and butter!
Step 1: Strain the over-whipped cream. The liquid you get is buttermilk! SO EASY RIGHT. Buttermilk is actually pretty expensive so you are really saving $$ this way.
Step 2: Continue to whip the remaining curdles. It will soon firm up to become creamy and kind of soft. Do not worry that it doesn't seem to be hard like normal refrigerated butter. It will harden once you chill them in the fridge for several hours.
TA-DA, butter + buttermilk. Enjoy!
These taste lighter and less oily than the normal kind of butter. You can use them in baking stuff also, but your baked goods will turn with a lighter (probably healthier) flavour.
